Cherry & Almond Jam Tartlets

Ingredients:

For the tart shell:

  • 1 cup flour

  • 1/2 cup ground almonds

  • 1/4 cup sugar

  • 1/2 cup butter

  • 1 egg yolk

For the filling:

  • 1 cup Cherry & Almond Jam

  • 1/4 cup almond flakes.

Steps:

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix together the flour, ground almonds, and sugar. Cut in the butter until the mixture resembles breadcrumbs. Stir in the egg yolk until the dough comes together.

  3. Press the dough into the bottom of tartlet pans, prick all over with a fork, and bake for 10-15 minutes or until lightly golden. Let it cool.

  4. Once the tart shells are cool, fill them with the Cherry & Almond Jam and sprinkle the almond flakes on top.

  5. Bake for another 10-15 minutes until the almond flakes are lightly toasted. Let the tartlets cool before serving.
